Except this is touhou where immortality and agelessness is under every other rock. Trying to shoehorn this into the series just to make it "relatable" and make you feel better about dealing with your own life problems is goofy and self centered.
This entire thing about Sakuya dying started with her making excuses not to be force-feed Mokou's guts. Even Marisa rejected the idea and she's actually trying to become immortal. Since Sakuya doesn't want to be a cannibal I can't think she'd be too thrilled about drinking blood either, hence the excuses to reject being a vampire as well.
What's really funny is that people then conveniently ignore the fact that right after this dialogue Remilia then remarks to herself she can't remember how long Sakuya has worked for her. A 500 year old should be able to remember less than 20 years, so it strongly implies Sakuya is ageless already.

So in layman's term this is like buying a pet dog. You buy it when it is young and it will probably die way before you. People should move on instead of getting all sob over it, and if they can't maybe they should have bought a Galapagos tortoise instead.
My guess at an perpetuating the mystery for Sakuya: - When Remilia said she can't remember how long Sakuya was under her wing, she meant it (2 decades' no biggie). - Sakuya is familiar with outside world technology, but her knowledge and experience stops at around the early 2000s at most (if she really were a human, then she'd have to go to Gensokyo some point in 2002), meaning she's never of touch screens or any 2010 technology. - Sakuya takes motifs from Victorian era, Jack the Ripper, and Dio. - As Akyuu said (credit where it's due), Sakuya has an incredibly refined manner for her supposed human age (centuries of experience vs 10s-20s she claims to be).
I like to think of it more as a loving thing, rather than sad. Remilia goes to Sakuya's grave to remember her. To Remi, she was more than a maid - she was family, and a friend. And those are the kinds of people you'll never forget, no matter how long you live.
Keep that person in your heart and remember them always, and I assure you, they'll never die. They'll always be with you, even if it's just in your mind.
