Master Kavar from the Kotor games comes to mind, but its mostly villain characters who dual-wield.

In addition to the other examples, in The Phantom Menace, when Darth Maul's double-ended lightsaber was cut in half, he dual-wielded the halves.

I'm not surprise to see this, ever since Kirito bought that laser sword. (took longer for this appear than I expected)
