I really don't get this sort of thing. If you like someone, why not keep using them? The quartz gain from bond levels is painfully slow. Though if someone is collecting Bond Essences, I can see that, but it's still no reason to lock yourself out of good team combinations.
Neither do I. Grinding bonds for gems seems pointless. You only get a noticable ammount from four and five star servants, and those take forever to level.

The backline party members don't matter much when you're farming for materials/experience/QP, so some just put in whatever servant they can to farm for apples/quartz in the meantime. Sure, it's a slow process, but it's better than nothing.

Strictly speaking, it's fine as long as you win, so if you could've won with a weaker team, and that weaker team would've given you more items or xp or whatever, then objectively, the weaker team is the better choice.
This is why it's better to fill up slots in RPGs with exp or gold or "luck" (if it increases treasure drop rate in that game boosting items, even if they're a trivial 2% boost - so long as it isn't the difference between victory and defeat (and using a different item won't make grinding MUCH faster, like an instant-kill ability or something), then anything that gets you more loot is an objectively more efficient tool in grinding.

In my case, I have many servants whom I'd like to get their bond CE. I don't really care about the Quartz, though, and if any average battle is annoying enough I'll just bring them regardless.
