Gah. And we're literally elbow deep in mango over here. There's too much that we can't possibly finish them all before they go bad, but not enough to be worth shipping off to relatives.

Maybe making preserves or drying some of it? Dried mango can be quite tasty.

Basically happens with figs at my house for two weeks a year.

Never tried cooking savory dishes with it, though eating it with sticky rice doused with coconut milk is a must.

My grandma used to make those dried mango rolls. A hint on the tangy side and will last for two years if you keep it refrigerated. God bless her soul.

I'd like to make some, too, but there's only so much sunlight now that we're also getting daily downpour. Being the rainy season over here and all...

Candied mango is good. And you can eat it as condiment with rice if you made Chilli Mango out of it.
