I can understand him being somewhat upset. Sure, a chef wants people to eat their food, but they also want people to critique their food honestly. It's hard to have a good critique when the subject will pretty much eat anything in front of them.

This is also Shirou, who exists simply to be a hero. He is unlikely to, realistically, notice the result of his actions beyond the immediate impact of his cooking. It took him a good three paragraphs to deduce that Rin is in fact a girl, due to the fact that she didn't really need anything from him.
