Does anybody know the price color codes of the plates?
I don't directly know, but it seems like whites are cheap (things like eggs), blue is medium (shrimp), while the black and red plates are expensive things like urchin and salmon roe. I can't tell what's on the yellow, but I'm guessing it's one of the expensive types because all the special things in later days come on yellow plates.

It appears to be fatty tuna, which if i'm not mistaken is one of the most expensive sushi you can get, so you're probably correct
