To be fair, the mainline GuP (anime/movie/ova) has a huge cast of characters (100+). However, I checked the most recent occurrence for all of the characters, and it HAS been a while since the last Anzio appearance. They're close to the bottom 10%, even though their occurrence rate is pretty high.
However, as I recall, the other major teams (including Anzio) seem to get a spotlight in Episode 2, so perhaps once the BC Freedom/Aoshidan characters have been explored enough, the artist will go back and do something with all of the major teams.
Also, poor Momogaa has basically been nonexistant. That team existed basically to be in the OP and then get eliminated 10 seconds into their only match. It's a pity there was absolutely no effort spent on them in the original run.

I know that this probably won't happen but it would also be nice to see the spinoff characters get some love too, mainly emi, shizuka,jajka,eclair and noemi

There's always some hope of that happening, as Eclair finally made it to mainline GuP in The Final Chapter Episode 2.
Given that, I imagine that it's very likely that some of the other spinoff characters will be making at least some sort of cameo appearance in future episodes.

It makes sense too, since Maginot's symbol was shown in GuP OVA 3. In a hallway, the Anglerfish girls looked at a display of trophy-like symbols, from Kuromorimine to St. Gloriana. Maginot's was there.

Well yeah, those high schools have always been mainline canon, though the characters in the spinoffs aren't necessarily. For instance, even though BC Freedom Academy has already been shown, Asparagus isn't necessarily mainline cannon, unless she gets some kind of cameo in an upcoming episode. Though since the "BC Freedom arc" is over, that may not happen now.
