Well let me remind you the anime kinda messed up Louise's characters; in the novels she has more deredere moments (to the point after some bad outbursts, she apologizes)
But I think her tsuntsun is caused by her pride and such. Though it doesn't help that Saito has a thing for sizable breasts (but he does think a Louise is fine too)
