The green could be avocado, or lettuce. I don't usually see that served with breakfast except as a garnish, though.

It's definitely lettuce, the red-leafed kind.
Even if they said 'American Breakfast' the artist's inner asian must've peeked through, because you'd never seen lettuce on REAL American breakfast, but you will see them often on asian versions, which often adds a side of sliced tomatoes and lettuce as mini-salad.

Hisahiko is Japanese, so his experience of American Breakfasts is probably from a family restaurant like Anna Miller's.

If I'm getting veggies with breakfasts, it's tomatoes. Also, extra sausages.
