Prion disease isn't a real concern at all. Of all the ways you could get it, ingestion is the least common, and even accounting for all methods of developing it it only affects 1 person in every 1 million people worldwide iirc. Kuru is also the only known case of transmission through infected human brains, last I read up on the topic. Keyword on "infected."
You could only get it from eating Laios' brain if he was already infected with it, and that's extremely unlikely given that it's terminal and the life expectancy of someone that's developed symptoms is only a few months to a few years.
