Well to be fair, that pool was pretty much started by 1 artist. And I guess it just didn't catch on that much on Pixv.

Maybe, but the way she words it, it feels more like she's confessing rather than reacting to a confession (i.e. you'd think that there was a "too" in there).

The current translation is accurate. Though, a better translation might lengthen the phrase by several syllables to better fit the original.

Is there more to this? Because that seems like an awfully lot of work in Japanese to say "I like you." I shudder to think of what it must take to say "I love you."

Theres a long way and a short way to say I love you in any language. This translation is indeed correct. I hope APerson2380 was just exaggerating but there is only 1 kanji symbol in all that.

あんた (form of anata (貴方), personal pronoun 'you')

なんだよ (form of nanodesu, sentence ending indicating that the speaker is sharing information that is new to the recipient)

Yeah, it's pretty awkward for such a pretty long sentence gets translated in to 3 words. I have a little objection though. Like

あたい is the actually originated from あたし, which is also 私 in feminine tone. But this one is more likely to be caused because of lisping instead of intentional. And that is why it's childish.
あんた, I think it's just shortened from あなた. You know, there are times when words get shortened into ん.
のことが actually has proper meaning. It's something like "~about thing of something". It's really hard to word it in English with all the culture difference but it's along those line of "things about you" when combined with あんた. I got told this by Mr Asada once. Tried hard to remember about it.
好き isn't a verb, it's a な adjective.

Maybe I'm just a show off but I felt I had to say something about it. Sorry.
