He was originally mentioned as 7 feet, Disney put him at 94 feet, and another tale doesn't mention his height, but mentions that one of Babe's eyes was 63 feet tall, which assuming an equivalent scaling between Babe and Paul (average cow eye is about an inch in diameter), means Paul would be 9072 times the height of the average man, or 52164 feet (15,900 meters).
Given that 52164-foot range, I think its safe to say his height is "whatever makes the tall tale in question work".
