I still don't understand how Monster Girl Encyclopedia can have such diverse entries like Cait Sith or Barometz, but not basic, popular monsters like a Mind Flayer or a Hydra.

Also gremlin, pegasus, hippocamus, shouten doji, kyonshi, leviathan and phoenix are not here.

If you add a Leviathan, then might as well add Behemoth since the two creatures are direct opposites. Leviathan is the beast of the seas as opposed to Behemoth who is the beast of the land.
